Montage Los Cabos, a luxury resort nestled in an idyllic cove along swimmable Santa Maria Bay, and Mirazur restaurant, from Chef Mauro Colagreco, in Menton, France – crowned the #1 restaurant in the world by The World’s 50 Best Restaurants in 2019, are pleased to announce ‘Mirazur Beyond Borders’ at Montage Los Cabos, an exclusive dinner series. While Mirazur renews the Heart of the Restaurant in Menton, France with a complete renovation of the kitchen, Chef Mauro will take up residency at Montage Los Cabos, making the resort the only place in the world to experience Mirazur ́s holistic approach to fine cuisine from February 9-18.
Mirazur Beyond Borders will be a once-in-a-lifetime experience that celebrates the richness of Mexican culture and terroir, and the bountiful produce found in Baja. Chef Mauro and his team will use their time in the destination to study and experiment Mexican products, flavors, and soils to craft this unique culinary journey and spark creativity for the reopening in France.
“The residency at Montage Los Cabos is not only a unique and fine dining experience, it will also serve as an opportunity for myself and our team to immerse in the local culture, and better understand Mexican soil, land, and the natural environment,” said Chef Mauro.
Mirazur Beyond Borders will not only provide a unique and fine dining experience for Montage Los Cabos’ guests but it will also further both the restaurant and the resort’s commitment to sustainability. Chef Mauro’s team will include a scientific gardener from Mirazur’s garden who will spend time with local producers and farmers, exchanging Mirazur’s eco-conscious gardening techniques and learning new skills from the Mexican culture. In addition, Mirazur and Montage Los Cabos’ culinary teams will collaborate with the Plastic Free Certification to support environmental efforts.

The evenings will be composed of a carefully curated degustation menu, highlighting Mauro’s vision and culinary identity from nature to the plate, mixing Mexican flavors and products. Chef Mauro’s cuisine has always defied categorization, and true to his inclination toward dishes that embrace their surroundings, he will work primarily with fresh local ingredients sourced from the Baja Peninsula. Just as the dinners will be a fusion of flavors, the wine pairings will also be an exploration of the diverse regions of Mexico, France and California.
