How to Plan a “Los Cabos Day” in Quarantine

Although we are unable to physically travel right now, that does not mean we have to stop dreaming about future vacation getaways. To help ease your wanderlust, here are some ideas and activities that will bring Los Cabos to you in your home.

Today’s Menu…
While you can never go wrong with a simple Baja Fish Taco, we challenge you to step it up a notch and put your culinary skills to the test with a fresh seafood ceviche. Waldof Astoria Los Cabos Pedregal shares an easy and delicious recipe for their “Granny Smith Apple Ceviche

+ 8 oz. Local seabass
+ 1 can Coconut Milk
+ ¼ ea. Red Onion
+ 1 ea. Cucumber
+ 1 ea. Granny Smith Apple
+ ¼ ea. Habanero Chile
+ 5 ea. Limes
+ ¼ Bunch Mint
+ ¼ bunch Cilantro
+ Olive Oil
+ Salt
+ Tortilla Chip
Waldof Astoria Los Cabos Pedregal

Dice fish into cubes and marinate for 1 hour or longer in lime juice. Dice and prepare all other ingredients.

Once fish is cooked, strain out lime juice and place into a bowl.

Add all other ingredients including the juice of one lime and the coconut milk.

Salt and serve well chilled with garnish of sliced apple, mint and fresh tortilla chips.

Mix Up Signature Farm-to-Table Drinks
Try these cocktail recipes brought you by some of Los Cabos’ favorite Farm-To-Table restaurants. Each sip of the creation will instantly transport you to the warm oasis of these organic farms.  Extra quarantine points if you re-create these drinks with items from your own garden!

An exciting, refreshing twist on the margarita, Flora Farms shares with us their Farmarita recipe:

+1 lime wheel, for garnish 
+ Margarita salt, or kosher salt, for glass rim 
+ 2 ounces white tequila
+ 1 splash Cointreau or another triple sec
+ 2 ounces carrot juice
+ 1⁄2 ounce orange juice
+ 1⁄2 ounce lime juice
+ 1 splash simple or agave syrup
+ Ice
Spread a bit of salt on a small plate. Gently rub the lime wheel around the rim of a rocks glass. Dip the moistened rim in the salt to lightly coat. Set aside.
In a cocktail shaker, combine the tequila, Cointreau, juices, and simple syrup. Shake, strain into the prepared glass, then add the ice. Garnish with the lime wheel and carrot and serve.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
