One&Only Palmilla Welcomes Plant-Based Celebrity Chef Matthew Kenney for Exclusive Two-Day Culinary Affair in Los Cabos

Los Cabos, Mexico (February 2020) One&Only Palmilla, the ultra-luxury retreat located on the edge of Baja Peninsula, will host two exclusive culinary experiences led by Matthew Kenney, the globally celebrated chef, entrepreneur, author and educator at the forefront of the plant-based food movement. On April 23 and 24, guests can join Chef Kenney on a culinary journey through the local flavours and seasonal produce of Mexico, savouring curated interpretations of signature dishes from his acclaimed menus around the globe.

On Thursday, April 23, 2020, Chef Kenney will invite guests to an intimate cooking demonstration and lunch at the resort’s private Herb Garden, celebrating the fresh bounty of indigenous herbs and vegetables native to Mexico. Guests will have the opportunity to get up close and personal with Kenney and get a deeper understanding of plant-based cuisine, methods and technique, and the future of food, whilst learning to prepare four delicious plant-based dishes. The first half of the class will be devoted to cooking instruction, with the latter spent savouring the results.

Participants of the cooking class will also take home a copy of Kenney’s plant-based cookbook PLANTLAB, where he employs inventive technique and creative thinking in dishes that are both visual masterpieces and delectable meals, helping redefine plant-based cuisine for the home cook. Later that evening, Chef Kenney will take over the resort’s historic Veranda for a personalized signing of the celebrated cookbook, which will be available for purchase to all guests.

On Friday, April 24, the Herb Garden will once again welcome gourmands to enjoy Matthew Kenney’s elevated and refined plant-based cuisine, inspired by the four classical elements of the spectacular al-fresco venue – earth, water, air and fire. Paired with natural, organic wines from Querciabella—a 100% plant-based winery that forbids the use of animal products in their vineyards or cellars, the five-course menu will showcase the best of the region’s produce with beautifully crafted dishes utilizing the highest quality of raw ingredients.
